📄 Project Abstract

Fresh produce, mostly fruits and vegetables, is an important part of the human diet since it contains important vitamins, minerals, and fiber. Increased consumption of fresh food, on the other hand, has contributed to an increase in the frequency of disease outbreaks around the world. Because fresh produce is frequently consumed raw, it is more likely to be contaminated with pathogens such as E. coli 0157:H7, which can cause food poisoning and, in extreme circumstances, renal failure and death, especially in children. Fresh produce is purchased in both closed stores and roadside open kiosks in impoverished nations like Nigeria, and most of the time it is not treated hygienically. The prevalence of Shiga toxin-producing E. coli in various fresh produce (Lettuce, Watermelon, Pineapple, Cucumber, Cabbage, Carrot, and Pawpaw) from various roadside fruit vendors in different locations around the South-west region of Nigeria, specifically Lagos and Ogun state, is reported in this study.
