📄 Project Abstract
Enzymes are biocatalysts extracted from plants, animals and" microorganisms. Enzymes catalyze chemical reactions with great specificity and rate enhancement. These reactions are the basis of the metabolism of all living organisms, and provide tremendous opportunities for industry to carry out elegant, efficient and economical biocatalytic conversion (Godfrey and West, 1996). Among them, microbial enzymes are becoming important for their technical and economic advantage. Various kinds of microorganisms naturally degrade different types of proteins and this degradation is related to their proteolytic potentials. Hydrolytic enzymes account for about 80% of the enzymes produced annually and of which 60% are proteases (Rao et al., 1998; Shumi et al., 2004c; Olajuyigbe and Ajele, 2005; Joo and Cheng, 2006 and Sana et al., 2006).
